Valentine's Day: Love is in dessert

Laura Albert's Coconut Cream Pie
Sermet's Tiramisu is in-house made with lady fingers dipped in coffee, layered with marsala sabionne, topped with shaved chocolate and cocoa powder.
Vespa Pizzaria Tiramisu is an in-house made traditional Italian cake, layered with lady fingers soaked in coffee and liquers, chocolate & cream.
Sermet's Tres Leches is in house made, vanilla sponge cake, soaked in coconut mile, heavy cream evaporated mile. It is topped with fresh whipped cream and toasted coconut.
Daniel Island Grille's Four Layer Chocolate Ganache Cake is wonderful with a glass of Lamarca Prosecco.

With Valentine’s Day this Friday, we wanted to know whether islanders would splurge with dessert to celebrate the holiday of love. In our exclusive Daniel Island News survey we found out that the majority of our survey responders do indeed plan to have dessert this Valentine’s Day.    
Sixty-six percent of survey responders will splurge with dessert on Valentine’s Day. That is a pretty big number considering losing weight is the number one New Year’s resolution year after year. Maybe indulging in a Valentine’s dessert is the first cheat of the year for these people?  
But what kind of dessert do most people want to cheat with? Chocolate has long been the dessert of choice for Valentine’s Day so we asked our readers how often they eat chocolate on a regular basis, and if they plan to eat chocolate on Valentine’s Day, what kind?
Seventy percent of survey responders eat chocolate up to once a week. And a whopping twenty-six percent eat chocolate at least once a day. Just fewer than three percent do not eat chocolate at all.
Over half of the survey responders said they will eat something with chocolate this Valentine’s Day. Chocolate-covered strawberries were the most popular answer.
If you are planning to visit one of Daniel Island’s great restaurants this Friday night to celebrate Valentine’s Day, there are plenty of yummy desserts that will satisfy the need to indulge. We asked our readers what the most popular desserts are at our Daniel Island restaurants.
The most favorite dessert that came up in our survey is the Tres Leches cake at Sermet’s Courtyard (which is pictured in this feature). Other favorites were the Coconut cake at Sermet’s and the Coconut Cream Pie at Laura Albert’s (also in this feature). Regardless of what you indulge in this Friday for Valentine’s Day, we hope your day is full of love (and something sweet)!

So maybe you         aren’t going out for dinner this Valentine’s Day holiday, but instead are cooking at home for your significant other. Here are some suggestions for desserts you can make                           at home for the special occasion.

STRAWBERRIES (includes nuts)
1 cup pretzel rods
1 cup almonds
3 (4-ounce) bars semisweet chocolate, melted (recommended: Valrhona chocolate)
8 long-stemmed strawberries
Chop pretzels and nuts and place in 2 separate bowls. Chop chocolate.
In a double boiler, melt chocolate until smooth and velvety.
Dip strawberries in chocolate and then in pretzels or nuts.
Place covered strawberries on a 1/2 sheet tray lined with waxed paper. Allow to set at room temperature and serve.

2 sticks unsalted butter, plus more for the ramekins
4 teaspoons granulated sugar
1/2 teaspoon ground cinnamon
Pinch of cayenne pepper
Pinch of nutmeg
12 ounces semisweet chocolate, chopped
1 cup all-purpose flour
2 1/2 cups confectioners’ sugar, plus more for dusting (optional)
6 large eggs plus 6 egg yolks
1 1/2 teaspoons vanilla extract
1/4 teaspoon almond extract
Preheat the oven to 400 degrees F. Butter eight 6-ounce ramekins and sprinkle each with 1/2 teaspoon granulated sugar.
Combine the butter, cinnamon, cayenne, nutmeg and chocolate in a saucepan over low heat, stirring frequently until melted and smooth. Cool slightly. Whisk the flour, confectioners’ sugar, eggs and yolks, vanilla extract and almond extract in a bowl until creamy. Whisk in the melted chocolate mixture. Divide among the prepared ramekins.
Bake the cakes until the tops are stiff and the edges darken, 12 to 14 minutes. Remove from the oven and let cool 5 minutes. Loosen the edges of the cakes with a small paring knife and transfer to plates while warm. Dust with confectioners’ sugar.

•     Physicians used to prescribe a dose of         chocolate to cure the pangs of lost love in         the 1800’s.
•     Conversation candy-hearts were first made         by Daniel Chase in 1866.  Eight million are         sold each year.
