A go-to homemade casserole recipe that is sure to please your family
Let’s face it—between balancing work, kids, and everything in between, getting a healthy, home-cooked meal on the table can be stressful.
 
If you’re anything like me, the days are long, and the last thing you want to do is worry over dinner. 
 
That’s why I’ve become a huge fan of casseroles and slow cooker meals over the years, especially this time of year. They’re simple, affordable, and can feed the whole family with leftovers to spare.
 
Plus, they offer the perfect way to switch things up when your dinner menu starts to feel a little too routine.
 
One of my favorites is this easy, customizable cheesy chicken and rice casserole that’s become a lifesaver in my household. Whether you’ve got picky eaters or adventurous taste buds, you can tweak it to fit whatever your family loves.
 
Fall is now officially in full swing, so in my house, it is casserole and Crockpot season! There’s nothing quite like coming home to the comforting smell of a hearty dish cooking up in the kitchen, ready to warm up the whole family after a busy day.
 
The Cheesy-hicken’ role (as my kids call it) 
 
Ingredients:
 
● 6 boneless chicken breasts, uncooked, diced up
● 2 cans cream of chicken soup
● 1 cup shredded cheese (I like mozzarella, but use what you like)
● 2 cups uncooked rice
● 2 cups of milk
● Salt, pepper, and any other seasonings you love
● Optional: Crushed crackers or breadcrumbs for a crunchy topping
 
Instructions:
 
1. Preheat your oven to 350°F.
2. Cook in a covered casserole dish for 95 minutes, stirring every 20 minutes.
3. For the last 10 minutes, add the crunchy top layer if you want.
 
That’s it! A warm, hearty meal that will have your kids asking for seconds and save you the headache of a complicated dinner prep. You can also make it ahead of time and pop it in the oven when you’re ready.
 
With a little planning, this dish is a time-saving, crowd-pleasing solution to busy weeknights. Feel free to add some veggies, hot sauce, or any additional seasoning if you want to spice it up. I keep mine simple so the kids can enjoy it.
 
As a busy mom of three kids under five, and with both my husband and I working full-time, we know how important it is to carve out time for family meals.
